Something about warm mornings makes me crave a creamy smoothie filled with fresh fruits and veggies. Its the perfect tasty start to a day, and with all the nutrients packed into one yummy glass - a day that starts with a smoothie is bound to be a good one!
As part of my plunge into the book My New Roots on Lavende & Lemonade, I've prepared the Strawberry Coconut Milkshake on page 33.
STRAWBERRY COCONUT MILKSHAKE
This milkshake is truly decadent and luscious beyond belief. When strawberries are in season, their flavor is so remarkable -- and what better way to enjoy them than blended with creamy coconut and floral bee pollen?

- 1 cup / 250g strawberries, plus more for serving
- 1 frozen banana
- 1 cup / 250ml coconut milk
- Grated zest of 1/2 organic lemon
- 1 to 3 teaspoons bee pollen (depending on what you're used to eating), plus more for serving
- 2 ice cubes
Combine the strawberries, banana, coconut milk, lemon zest, and bee pollen in a blender. Add the ice cubes and blend on high speed until smooth and creamy. Garnish with sliced strawberries and a sprinkling of bee pollen.

As I'd mentioned in my last article on My New Roots: Inspired Plant Based Recipes for Every Season, at my first reading of this recipe I was skeptical..."who cooks with Bee Pollen??". Never one to let a mystery go unsolved I've been studying up and have written about it here.
This smoothie, or milkshake as its called in the book, is a winner. A more sophisticated spin on the classic strawberry-banana-yogurt smoothie that is worth taking a few extra seconds to put together!
