Healthy Crock Pot Chicken and Pasta

Healthy slow cooker chicken pasta

After years as a purist, I've given in and bought a crockpot.  What in the world was I waiting for??  Put ingredients in a pot, and come home hours later to a piping hot, delicious meal - I'm sold.


  • 1 lb chicken (I prefer organic chicken thighs)
  • 1 onion, diced
  • 1 package mushrooms (8 oz)
  • 2 cups chicken stock
  • 1 cup white wine
  • 1 cup cream (whipping cream or half and half work well)
  • 1 tbsp Thyme
  • Salt, pepper
  • 1 box spaghetti, slightly undercooked
Place first five ingredients with thyme, salt and pepper in a crock pot and cook on low for 8 hours.  Confession, I actually cheat and put the chicken in there straight from the freezer and it comes out beautifully, saving the defrost step!

Before serving, add the cream and stir.  Shred the chicken into bite-sized pieces and remove any bones.
Meanwhile, prepare a box of spaghetti, undercooking slightly, and mix with the chicken. Voila, dinner is served.

I've seen some recipes out there where the pasta is cooked directly in the crockpot...but am skeptical for the moment...maybe next time?  Have any of you tried it, and how did it turn out?

  1. Yes you can cook the pasta in the crockpot, but this is done about 30 minutes or so before serving, and will make your sauce thicker because of the starch from the pasta. If you leave it too long, your pasta can turn into mush.
