Our friend put in a special request for a savory breakfast on his last day in town, and was delighted when I presented this cheesy French Dill Omelette featuring Arla Dofino's extra creamy Havarti. It is simple to make, and a great breakfast for entertaining since everyone gets to customize his own fillings.
FRENCH DILL OMELETTE
INGREDIENTS (for 1 Omelette):
Egg Shell:
Filling:
- 1 slice Arla Dofino Havarti Dill Deli Slice cheese
- 1 handful of sauteed sliced mushrooms
- 2 cherry tomatoes
DIRECTIONS
1) Start by sauteing a package of button (Parisian) mushrooms in olive oil over medium heat for several minutes, uncovered, stirring occasionally. Set them aside in a small bowl to use as a filling.
2) Wipe clean the pan with a paper towel and pour a tablespoon of olive oil into it. Heat the olive oil over medium heat and wipe the oil around the pan to completely cover the working surface. This makes the omelette nice and easy to flip when the time comes.
These French-style omelettes start with 2 eggs per person. I prefer to make one omelette at a time to make sure that they're all the same size...its so much easier to just pour the bowl into the pan than to try to measure out the right amount for each person.
3) Crack two eggs (we like to use free-range brown eggs, organic if they're available) into a large cereal bowl. Add a teaspoon of water and whisk the eggs together with a fork - about 30 seconds is enough.
4) Pour the egg mixture into the pan you've prepared, season with salt and fresh-ground pepper, and let the egg cook for about 30 seconds over medium heat. Use this time to get your fillings ready to go. This part is fun because guests get to pick what combination they'd like!
5) Cut a slice of Arla Dofino Dill Havarti cheese in half and place it onto one side of the omelette. Then place your favorite toppings onto the other - today we've used sauteed mushrooms and cherry tomatoes but feel free to get creative!
6) Put a lid onto the pan and let it cook for about a minute. Then use a spatula to fold the omelette in half, cover, and let cook another minute. Oh yum, the cheesy goodness!
