This recipe is brimming with nutrients and has a fresh, earthy flavor. It's a delicious way to mix greens into dinner, and a great way to use the greens on beets that we would often just overlook and would otherwise toss. More about beet greens here!
- Large bunch of beet greens, roughly chopped
- 4 cloves of garlic, chopped
- 1 dried chili pepper
- Juice of 1 orange
- 1 cup of chevre goat cheese
- 1 box whole wheat spaghetti
- Olive oil, salt, and pepper
Instructions:

Heat olive oil and chili pepper over medium-low heat in a saucepan until hot. Add the beet greens and garlic and saute until gently wilted. Add the juice of one orange, salt and pepper to taste.
Generously drizzle the pasta with olive oil, and mix into the beet greens. Serve, and top with cubes of chevre.
Enjoy!
I'm not a fan of goat cheese, but this does truly look delicious. And it looks very healthy.
