Roasted Pineapple and Ice Cream
This dessert makes me think of a trip to Hawaii. So simple, so fresh tasting, and a healthy after-dinner treat.
Ingredients:
Fresh pineapple, sliced into small chunks or tidbits
Dark Rhum (optional)
Ice Cream: vanilla is my favorite for this, chocolate is also good...
Heat a saute pan or cast iron skillet, then add the fresh pineapple pieces. Cook on medium until the pineapple is soft and a deep yellow color. If you're feeling wild, add a tablespoon of dark Rhum and stir. If you're feeling really wild, flambe the pineapple by lighting the Rhum with a kitchen lighter!
Let cool a bit - enough that it doesn't instantly melt the ice cream - then serve on a scoop or two of your favorite ice cream.
