In France, they say that you tell exactly where a cow is from, based on the flavor of its milk. Depending on the climate and grazing pastures, each region's cows are influenced by the environment and give the milk its own variation on flavors. I love that attention to the origin of foods, and the connection between the earth and our own bodies.
Here in the US we've in many cases lost sight of what we eat and drink, and where it comes from. When is the last time you thought about the cow who delivered the milk in your morning coffee? Probably not recently! Each animal has its own story, its own set of qualities, which come through into the foods they give us.
