Not long ago I was asked at the last minute to bring an ice cream cake to a party. Instead of picking up a mysterious concoction at a chain ice cream store, I thought of this simple method.
Here is how to make a homemade ice cream cake in just a few minutes! The cake is narrower than a traditional cake, but by making it tall it makes for an impressive presentation and there is plenty to go around.
- 1 sheet of thin brownies
- 1 gallon of ice cream
1) Start by baking thin brownies on an extra large sheet pan using your favorite recipe. Once they've cooled, begin creating the cake.
2) Using the lid of the ice cream container like a cookie cutter, press the lid into the brownies to make large circles. It works best if the inside of the lid is facing the brownies (ice cream side down). Place one of the brownie rounds onto a serving platter.
3) Place the gallon of ice cream on its side, and cut 1 to 1 1/2 inch slices from the top. Carefully remove the cardboard ring, and place the ice cream slice onto the brownie round.
3) Repeat the layers until you've achieved the height you're looking for. Then, place the cake into the freezer to harden until its time to serve.
