French Farmhouse Soup



Farmhouse Soup is a classic French blended soup that is overflowing with clean-eating goodness and healthy nutrients.  It is a warm, cozy bowl of satisfying vegetables.

The French have an expression, "La soupe fait grandir" which means, "Soup makes you grow big and strong".  With the amount of nutrition packed into one bowl, it is easy to understand why.

This soup is fantastic topped with a spoonful of cottage cheese, which gives just the right amount of creaminess without a lot of calories.  Cottage cheese is actually my new favorite healthy topper for soups and chili.

When I'm choosing which brand of cottage cheese to buy, I look at the ingredients list and pick the simplest one.  I like knowing exactly what is in it, and knowing that I'm not eating a lot of fillers and mystery ingredients.  

I was surprised to learn that Daisy Original Cottage Cheese is the only product on the market with just 3 ingredients: - cultured skim milk, cream, and salt - and no guar gum, additives, or added growth hormones like the other cottage cheese brands.  Even the organic cottage cheese brand has a long list of unpronounceables.

FRENCH FARMHOUSE SOUP




The best part of this soup is that the ingredients are completely flexible.  Swap in whatever vegetables and quantities that are in the kitchen, especially the ones that are reaching the end of their shelf life.  

INGREDIENTS

2 tablespoons butter

Batch 1:
3 stalks of celery
3 carrots
1 large bag of kale, spinach, beet greens, collards, lettuce, or whatever mix of greens that happen to be in the fridge
2 beets, peeled (optional)
Any other veggies that need to be used up (optional)

Batch 2:
1 onion
3 potatoes
water
Rosemary, bay leaf, thyme, salt & pepper

DIRECTIONS

In a pressure cooker, or a heavy-bottomed pot, melt the butter.  
Peel and roughly cut the ingredients of Batch 1 and add them to the pot.  Cover, and let them "sweat" for about 10 minutes. 

Meanwhile, roughly cut the Batch 2 ingredients.  Uncover the pot, add Batch 2, and fill the pot with water to just cover the ingredients.  Add a sprig of rosemary, thyme, salt & pepper, and 2 bay leaves.  Cover, and let simmer until the ingredients are all tender.  

Remove the bay leaves, then, using a hand mixer blend all of the ingredients together to make a smooth soup.

Add a dollop of cottage cheese, and season with pepper to serve.
