Madeleines are the traditional french cookies that are finally making a big move to the US...much to my joy!
Save yourself a trip to the boulangerie...or the line at Starbucks... and make these very simple, delicious Madeleines at home in minutes. Really. Minutes.
This recipe makes beautiful Madeleines that look like they're straight out of a French bakery. It is inspired by French Foodies who definitely know what they're talking about, and adapted to US ingredients.
- 1 stick butter
- 2/3 cup sugar (130g)
- 3 eggs
- 1 cup + 2 Tbsp flour (150g)
- Zest of 1/2 lemon
- 2 tsp baking powder
- Pinch of salt
Preheat oven to 350 degrees.
In a saucepan, melt the butter.
Once melted, remove the butter from heat and let cool.
Add sugar to the cooled butter.
Whisk together sugar and butter, until thoroughly blended.
One by one, add the eggs and stir the mixture.
Add the flour, half at a time, and stir well.
Add a dash of salt, the zest of 1/2 lemon, and the baking powder.
Spoon the batter into a madeleine pan, filling to 3/4 full.
Bake for 15 minutes, until lightly golden around the edges.
Remove from pan and serve warm. Delicious. Or once they've cooled...still so very delicious.
