Meatless Mondays with Gardein

Every day is a great day to go meatless...and Meatless Monday is a fun way to build meat-free options into our weekly routines.  Meatless habits we make on Mondays carry through the week, and before long our whole dining style evolves into something much more healthy - all week long!

Going meatless can sound intimidating at first, but it is really a simple transition to vegetable-based foods.  They're healthy, better for the planet, and in a lot of cases are more affordable than meat meals - its a win for everyone.  One meal at a time, one day at a time, we can become healthier.

Not long ago I'd shared a recipe for Gardein Chicken-less Tenders, and today I've sampled the Gardein Meatless Pepperoni Pizza Pocket and Gardein Sweet & Sour Porkless Bites.  Here are some fun ways for simple snacks and meals with them:


Gardein Sweet & Sour Porkless Bites:

They come with a great pork flavor on their own, and come with a sweet and sour sauce that can be added as well.  Either way works!


Here is a super easy recipe using the Porkless Bites, inspired from my favorite "comfort food" while living in China...




Sweet and Sour Pork Wraps


INGREDIENTS (Serves 4)

1 package Gardein Sweet & Sour Porkless Bites
4 whole wheat tortillas
2 cups julienned vegetables (in a rush, use a bag of frozen pre-cut asian veggie mix!) including carrots, leafy greens, and onions
Handful of spring salad mix (optional)

DIRECTIONS

1) Heat the Gardein Sweet & Sour Porkless Bites according to the simple package directions: Heat on medium for a few minutes, let them rest, then add the sauce packet.

2) Move the porkless bites to a small dish and set them aside.  Using the same skillet, heat the vegetables until they're tender to the bite but still have a bit of crunch left.

3) Assemble the wraps: Place a tortilla onto a plate, add a spoonful of the veggie mix and 1/4 of the porkless bites.  Roll the tortilla, and cut in half.

Its a quick meal filled with veggies and whole grains that is perfect for a busy night or lunch on the run.  They taste great cold as well, so wrap up a few for this week's lunch!







Gardein Meatless Pepperoni Pizza Pocket:

These are a simple snack on the run!  Pop them into the microwave for a couple of minutes, and you have a meatless pepperoni pizza bite to snack on.  Yum!
