Chocolate Oatmeal Pecan Cookies

Cookies.  They're a sweet little indulgence, that can add up quickly - especially during the holidays!  This recipe gives all the flavor and texture of a traditional cookie, but is a much lighter version...so go ahead and take two.  

This recipe for Chocolate Oatmeal Pecan cookies has a hearty cookie texture, but uses much less sugar and butter than a traditional recipe - without losing the flavor!


Chocolate Oatmeal Pecan Cookies


INGREDIENTS:

1 cup Original Quaker Oats
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt

1/3 cup unsalted butter
1/2 cup sugar
1/2 cup lightly packed brown sugar
2 tsp vanilla
1 egg

1/2 cup chopped pecans
1/2 cup Mars M&M's® Holiday Baking Minis


DIRECTIONS:

Preheat the oven to 350 F.

In a large bowl, mix together the first cluster of ingredients: Oats, flour, baking powder, baking soda, cinnamon, and salt.

In a second large bowl (or in a stand mixer), blend the butter and sugars together.  Once its nicely mixed, add the vanilla and egg and stir until its all smooth.

Gradually pour the dry ingredients from the first bowl into the wet ingredients in the second bowl, until they're just blended. Then stir in the pecans and chocolates.

Spoon the dough onto a non-stick baking sheet, or a baking sheet lined with parchment - about 1-2 tablespoons of dough per cookie.  Place them about 2 inches apart so they have room to expand - you don't need to press them flat.  Try to keep all of the cookies the same size so that they bake evenly.  Put them into the oven and bake for about 12 minutes - until they're golden around the edges.

Cookie ingredients are a fun gift to share, and can be made with supplies you probably already have at home!


Make a mason jar cookie gift:

1) Start with a clean, upcycled mason jar - one saved from a jarred pasta dinner or salsa works perfectly here.

Pour the oats into the jar, followed by the flour and other dry ingredients.  A paper rolled into a funnel shape can help the ingredients make it into the jar without spilling.




2) Use Glad®  Cling Wrap - Holiday Edition  to bundle the pecans and Mars M&M's® Holiday Baking Minis into individual packets.  Make sure the sheet of Glad® Cling Wrap is large enough to be able to tie the ends into a knot around the bundles - about 16-20 inch sheets.



Set the bundles on top of the flour mixture.  The M&M's®  are more flexible, so I suggest putting them on top in order to make everything fit snugly.



3) Get creative and make a cute recipe card that describes the contents and explains how to cook them.

I've use red and white construction paper.  The title and "Contents" listed on the front in red pen, then "Add" and "Make" descriptions on the back.  Then decorated with a silver marker and a small hole punched into the corner for hanging it.
































4)  Put on the finishing touches for the final product.  If the lid has writing on it, paint it with craft or spray paint to give it a fresh, new look.  

Then use ribbon or twine to attach the recipe label to the jar.  Voila!
