Whole Grain Apple Oatmeal Muffins



You would never guess these muffins are so healthy!  
The freshly shredded apple makes them incredibly moist and gives a gentle, sweet flavor that is perfect for breakfast, brunch, or a mid-day snack.  Plus, serving them in cupcake liners makes them feel like dessert!

I was excited to try these silicon baking cups from Brighid's Kitchen because of their fun spring colors and the fact that they're reusable.  Great for baking, or freezing small portions! 

Kids love them for their texture and color, and they help make cooking with the little ones even more fun.  Mine loves building 'castles' with the cups while we're collecting ingredients around the kitchen.


 Whole Grain Apple Oatmeal Muffins


INGREDIENTS:

Wet:
1 apple (peeled and shredded)
1/3 cup vegetable oil
2 eggs 
1 teaspoon vanilla extract

Dry:
1 cup whole grain oatmeal
1 cup whole wheat flour
3/4 cup sugar
1 1/2 Tablespoons baking powder


DIRECTIONS:

1) Preheat the oven to 350 degrees, and prepare the muffin tin by greasing it or putting in cupcake liners.


Whole Grain Apple Oatmeal Muffins - Recipe and Tutorial by Lavende&Lemonade2) Peel the apple, and use a grater to shred it into a medium bowl.  Stir in the Wet ingredients with the shredded apple: Oil, eggs, and vanilla.  Set the mixture aside until step 4.


3) In a large mixing bowl combine the Dry ingredients, blending them together well.  


4) Add the Wet mixture to the Dry mixture and stir until it is evenly blended.


5) Pour the batter into the muffin cups and cook for 15-20 minutes until they're turning golden.
