Whole Grain Apple Oatmeal Muffins
Wet:
1 apple (peeled and shredded)
1/3 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
Dry:
1 cup whole grain oatmeal
1 cup whole wheat flour
3/4 cup sugar
1 1/2 Tablespoons baking powder
DIRECTIONS:
1) Preheat the oven to 350 degrees, and prepare the muffin tin by greasing it or putting in cupcake liners.
2) Peel the apple, and use a grater to shred it into a medium bowl. Stir in the Wet ingredients with the shredded apple: Oil, eggs, and vanilla. Set the mixture aside until step 4.
3) In a large mixing bowl combine the Dry ingredients, blending them together well.
4) Add the Wet mixture to the Dry mixture and stir until it is evenly blended.
5) Pour the batter into the muffin cups and cook for 15-20 minutes until they're turning golden.
