One Skillet Salmon Dinner


Life gets busy.  But that doesn't mean its time to give up health eating habits and trade them in for a drive-thru meal.  There are plenty of ways to eat healthy in a hurry!

Luckily there are plenty of great options for eating despite a busy schedule.  Picking great ingredients that are versatile, multitasking in the kitchen, and getting creative with leftovers are all ways I like to keep healthy in a hurry.

Sprouts Farmers Market is one of my very favorite places to shop because they carry a lot of simple, healthy products that are easy to prepare.  They carry a lot of reasonably-priced organics (yay!), and their packaged foods tend to have more natural ingredient lists that what we find at the traditional supermarket. Striking the balance of easy, without being overly processed.  And, I love that they have a mini garden section right out front where we can pick up a new herb for the garden or potted plant - on the run.  Perfect!

A secret to making meals easy and healthy with a busy schedule is having fresh herbs on hand.  Grab them on your way to go shopping at Sprouts like I did today!  Then, combine them with fresh ingredients and pantry staples to make delicious creations.
To keep things simple in the kitchen, I like to use as few pots and pans as possible (to keep hand-wash dishes to a minimum), keep prep time low, and use ingredients that are fresh and versatile.  This recipe for one-skillet salmon is exactly that!

One Skillet Salmon Dinner from Sprouts 


INGREDIENTS:

Salmon and Potatoes
1 Sprouts salmon filet

1 Tablespoon olive oil
1 pound of small yellow potatoes
1 Tablespoon thyme leaves (from a fresh, potted Sprouts plant)


Healthy Dill Sauce
1 cup Mountain High yogurt
1 Tablespoon lemon juice
1/2 cup crumbled Sprouts feta cheese
2 Tablespoons dill (also from a fresh potted Sprouts plant!)
salt and pepper




DIRECTIONS

One Skillet Salmon & Potatoes

1) Start by dicing potatoes into 1 inch cubes. 

2) Pour a tablespoon olive oil into a pan, let it warm, and add the potato cubes and thyme leaves.  Let them heat up and brown on the outside on medium heat, for about 10 minutes. 

3) Once they're browned, lower the heat to low until about 5 minutes before mealtime.  At least 5 more minutes, but they can stay on for an hour if need be to match the family's schedule.  In the meantime, prepare your Healthy Dill Sauce.

4)  About 5 minutes before mealtime make a space between the potatoes and place the salmon, skin side down, into the pan.  Sprinkle the salmon with salt and pepper, and let the fish cook until it is cooked through to a light pink color.


Healthy Dill Sauce



During this time, prepare a simple yogurt sauce for the fish.  Mix a cup of yogurt with 1 tablespoon fresh lemon juice, 1/2 cup crumbled feta cheese, a handful of finely chopped fresh herbs (I like dill and thyme here), and a dash of salt and pepper.  




Mix it all together, and once its blended, pop it into the refrigerator to let the flavors set while the potatoes cook.



Serve the fish with a big dallop of the yogurt sauce and aside a serving of potatoes.
