Chili Cornbread Cups

Gameday Cornbread Chili Cups!

I'm on the road quite often, visiting new cities and corners of the world.  One of my favorite activities on a trip to a new country, or even an unfamiliar part of the US, is to explore a local grocer.  As simple and uneventful as it sounds, the food people buy and the way they shop gives such great insight into a local culture!  Culinary exploration.


I long ago gave up on the traditional souvenirs when I travel - who needs the clutter!  I prefer to bring unique clothing items that I can wear, and unique food and ingredients for the kitchen.  Forget the Eiffel Tower keychains and Hard Rock tees, my suitcases are much more likely to hold local jams, herbs, and interesting regional ingredients.

I've not yet had the chance to get to Venezuela, so this sneak peek into their kitchens is a special treat that I'm excited about.  P.A.N. Cornmeal is the top cornmeal in South America and a staple ingredient in most Venezuelan homes, and is now making its way to US kitchens.

The inspiration for this Chili Cup recipe is game day - such a fun way to serve chili at the watch party!  But it is also a creative way to serve chili for brunch, or as a hearty appetizer.  It works because of the thin texture of the P.A.N. cornmeal.  It gives the dough a flavor of cornmeal, with a texture that can withstand the chili without crumbling. #PANfan!


P.A.N. Cornmeal Chili Cups


INGREDIENTS

- 2 1/2 cups water
- 2 cups P.A.N. Cornmeal
- 1/2 cup traditional cornmeal (optional)
- Dash of salt

- Your favorite chili 
- Shredded cheddar cheese
- Optional toppings: Sour cream, avocado, cilantro...
DIRECTIONS

1)  Prepare a muffin tin with oil and preheat the oven to 375 F.

2)  Pour the water into a large bowl.  Slowly add the P.A.N cornmeal and salt, and stir it together with a wooden spoon.  Add the traditional cornmeal if you decide to use it.

3)  Knead the mixture together for a couple of minutes, then let it set for a couple of minutes (2-3).

4)  Take a small handful of the dough, about 2 inches in circumference, and roll it into a ball.  Then flatten it into a pancake shape.  Place the flattened pancakes of dough into the muffin pan.

5)  Bake the cups for 10-12 minutes.  Then spoon your favorite chili into each cup until they are generously filled.  Bake for 5-10 more minutes.

6) Remove the chili cups from the oven, sprinkle them with shredded cheddar, and let them cool.  Once they've cooled, remove them from the muffin tin and serve.  Top them with a bit of sour cream, cilantro, or avocado for an even more special treat.
